The Sixth Annual Art of Record Production Conference

Leeds Metropolitan University

on December 3rd – 5th 2010

The Program details will be published shortly but the conference will run from approximately 13.00 on Friday 3rd December to 17.00 on Sunday the 5th December.

cream of tomato soup with a basil crème fraîche

Served with warm ciabatta bread.

 

king prawn cocktail

Served on a bed of iceberg lettuce, with cucumber and lemon, drizzled with a cocktail sauce, served with sesame & pumpkin bread.

 

parma ham and galia melon

Drizzled with a pear, fig & white balsamic dressing.

 

feta, orange & cranberry salad

With butter beans, pine nuts and dressed seasonal leaves.

 

duck, fig & pistachio terrine, wrapped in parma ham

Served with onion marmalade and toasted ciabatta bread.

 

main dishes

 

roasted british turkey breast

Served with a pomegranate & rosemary stuffing and a Cumberland sausage wrapped in smoked bacon.

 

welsh lamb cutlets, with a redcurrant, cranberry & thyme sauce

 

scottish salmon, served with creamed leeks

 

roasted vegetable wellington

Roasted butternut squash, pine nuts, cranberries, peppers and courgettes, wrapped in pastry, with a cherry tomato & pesto sauce.

christmas pudding and brandy sauce

crème brûlée

profiteroles, filled with dairy cream and topped with a dark chocolate sauce

stilton, goat's cheese and mature cheddar, served with biscuits, celery and grapes

baked vanilla cheesecake, served with ice cream
